Well, it looks like Dan has Celiac disease.:( They are doing a biopsy next week to confirm the diagnosis. Since last Friday, Dan has completely cut out gluten. We have been busy educating ourselves and finding what's available for food around here. Hopefully, he will be feeling better soon!!
This weekend is going to be a challenge. Dan and the boys are going on a campout with Boys' Brigade. Dan is going to have to bring all his own food! If anyone out there has experience with this, we would love suggestions!

I'd be interested to know any helpful tips you have for a gluten free diet.

We have had our son on a GFCF diet for a couple of years now. There are three different ways to go about it: 1)Some people like to bake all of their own breads, muffins, etc. from scratch using rice flours, potato starches, tapioca flours, and the like, 2)some like to use GF mixes, and 3)some find it best to buy everything pre-made. I find that for the most part, the mixes make life easier for me and it is less expensive than the pre-packaged GF baked goods. I use pre-made GF mixes to make brownies, pancakes, muffins, and some breads, but I also buy bagged cookies at times, and I always buy sandwich bread, since I have never been able to make a decent loaf yet. You can also get GF oatmeal and I have a killer recipe for peanut butter oatmeal cookies.

I really like the Kinnickinnick pancake mix. It resembles regular pancakes in taste and texture the most out of any others I have tried. I like to add applesauce to them. http://www.glutenfree.com/Kinnikinnick-Pancake-Waffle-Mix/Item956037
A quick breakfast I give to Ben sometimes is a GF waffle spread with peanut butter. They are selling GF waffles in our regular stores now, along with many other GF products.

My son has been GFCF for 2 years. We travel with ,lots of Enjoy Life and EnerG products. If your son can tolerate nuts there are tasty treats by Mrs. May that are easy and healthy travel snacks too.
